Chicken Laab

A crisp and refreshing dish, and you only have to cook 1 ingredient! Perfect as an appetizer or a light meal. We hope you try this one out!

INGREDIENTS

  • Handful cilantro leaves finely chopped (optional)

  • 1 tsp sugar

  • 2 tbsp toasted rice powder (toast your own by browning 1/4 cup jasmine rice in a dry pan until golden, grind or pulse in food processor)

  • 1 lbs ground chicken

  • 1 head iceberg lettuce

  • Juice of 1.5-2 limes

  • 2 tbsp fish sauce

  • 1/2 bunch scallions finely chopped

  • 1 shallot finely minced

  • Handful mint leaves finely chopped

DIRECTIONS

  1. In a bowl, combine scallions, shallot, mint, and cilantro. Set aside

  2. In another bowl, combine rice powder, sugar, lime juice, and fish sauce

  3. In a wok or wide frying pan, sauté and break up ground chicken. Continuously ‘chop’ the chicken into fine crumbles. Note: The chicken will not brown due to the moisture

  4. Sauté ground chicken until cooked through. Spoon the chicken in the bowl of veggies/herbs, discard the extra liquids

  5. Quickly toss to evenly distribute

  6. Pour in sauce mixture and toss again, thoroughly

  7. Taste and adjust with salt or lime 

  8. Spread laab out in the bowl and refrigerate until chilled. Serve with a lettuce wedge and chili powder
