Cucumber Salad
A light refreshing side dish that goes well with just about anything! Throw in a few other leftover veggies too if you like.
INGREDIENTS
SALAD
2 medium cucumbers or 1 long English cucumber diced
1/2 pint cherry tomatoes halved
SAUCE
1 tsp garlic powder
2 tsp lemon juice
1 tsp honey or sugar
1 tsp salt
1 tsp sesame seeds optional
4-5 basil leaves, finely chopped
2 tbsp sesame oil
2 tsp soy sauce
1 tsp crushed red pepper flake
1 tsp black pepper
DIRECTIONS
Combine all sauce ingredients and shake or whisk until thoroughly mixed
Pour over chopped veggies and toss or shake to coat. For best taste, refrigerate for at least 1 hour but definitely can be eaten immediately
Garnish with toasted sesame seeds
